Fast and Easy Meals for Less – Made With Cal’s Canned Beef
Canned corned beef used to be really cheap but prices have risen in recent years. This is an easy meal to have on hand for when you can’t think of what to make for dinner or work is keeping you busy. I hope you enjoy it as much as we do!
STEP 1: Start With The Rice
Cook desired amount of rice in a rice cooker or saucepan. For 2 servings, use 1 – 2 cups rice and 3 cups of water in a small or medium size pot.
Pro Tip: If you are not sure how much water to use based on the size pot you are using, make sure the water is 1 inch about the rice.
Wash rice (if needed)
Bring water to a rapid boil. Add the rice with ½ tbsp of salt and stir. Bring back to a boil, cover with a tight lid, and turn the heat down to low. Cook for 15 – 20 minutes. Do not lift the lid until cooking is done.
Pro Tip: You can add butter or a tea spoon of coconut oil to help keep the rice from sticking together. The time the rice takes to cook will also depends of the type of while rice.
STEP 2: Move on to the Beef
While the rice is been cooked then prep for the beef. Slice the onion, skelion, tomato, scotch bonnet pepper, sweet pepper, and garlic to your liking .
Remove the Cal’s corned beef from the can and spread or slice it into pieces depending on your liking.
Heat a medium saucepan over medium-high, add the oil. Add the chopped seasons and stir cooking or blanching them for 2 – 3 minutes.
Add the the Cal’s canned beef to the blanched seasonings and simmer for 2 – 3 minutes.
Add 3 – 4 tbsp of Cal’s tomato ketchup to the been and allow to simmer for another 2 – 3 minutes.
STEP 3: Serve and Eat
Server with the white rice. You can add your own additional side dish like avocado or salads to your liking.
